Meal prep has a reputation for being obsessive — perfectly portioned containers lined up on Instagram, colour-coded by macros. That version of meal prep is a part-time job. It's also completely unnecessary.

The version that actually helps busy households is far simpler: spend 90–120 minutes on a Sunday doing some cooking in advance, so that every weeknight meal takes 15 minutes instead of 45. No perfection required. No plastic containers. Just less stress and less waste.

What "Meal Prep" Actually Means

Effective meal prep isn't about cooking 7 identical meals and refrigerating them. It's about preparing foundations — the components that take the most time — so weeknight cooking becomes assembly rather than cooking from scratch.

Rice takes 20 minutes. Start it first so it's done before you finish anything else. Make a large batch — 3–4 cups dry. This covers 4–5 meals.

Chop whatever vegetables need using up — peppers, courgette, sweet potato, broccoli, carrots. Toss in olive oil, salt, and pepper. Roast for 35–40 minutes. These go into grain bowls, wraps, pasta, and omelettes all week.

Cook your protein

While the veg roasts: season 6–8 chicken thighs and roast them (30–35 min), or simmer a pot of lentils (20 min), or cook a tray of salmon. Choose one protein that works across multiple meals this week.

Make a batch sauce

Sauté onion and garlic, add 2 tins of tomatoes, season, simmer 20 minutes. This becomes pasta sauce, pizza sauce, shakshuka base, and soup starter across the week. Takes 5 minutes of active effort.

Wash and store salad leaves and fruit

Washed and dried salad lasts 3–4 days in a container with a paper towel. Grapes and berries last longer washed and stored properly. This makes healthy snacking and quick lunches effortless.

Store everything

Rice in one container. Roasted veg in another. Shredded chicken or portioned lentils. Sauce in a jar or container. Label with the date. Your fridge is now a meal assembly station.

The overlap rule: Every ingredient you prep should appear in at least 3 meals. Chicken thighs: Monday pasta, Tuesday wrap, Wednesday grain bowl. Roasted veg: Tuesday wrap, Thursday frittata, Friday soup. Overlap = efficiency.
