The "3–4 day rule" is the single most useful food safety guideline for leftovers. Most cooked foods follow it. But some are shorter, some are longer, and knowing the exceptions can save you money and keep you safe.

💡 The smartest leftover habit: On the day you cook, put half the leftovers directly into the freezer before you've even eaten. You'll always have a meal ready and you'll never have to decide "is this still okay?" on day 5.

The 2-Hour Rule — Why It Matters

Bacteria that cause food poisoning (Salmonella, E. coli, Staph aureus) multiply rapidly between 40°F and 140°F (4°C–60°C). This is called the danger zone. Cooked food left in the danger zone for more than 2 hours accumulates enough bacteria to potentially cause illness — even if it's later refrigerated and reheated.

How to Safely Reheat Leftovers

⚠️ "If it looks fine, it's fine" is wrong. Many dangerous bacteria produce no visible changes, smell, or taste differences. Salmonella in chicken and E. coli in beef are both odourless and invisible. Always follow the time rules, not just your senses.
