Ground beef (mince) has the shortest fridge life of any common grocery item — only 1–2 days. The grinding process increases the surface area exposed to bacteria, making it spoil much faster than whole cuts like steaks or roasts. The rule is simple: buy it, cook it or freeze it.

💡 Tip: When you get home from the shop, immediately divide ground beef into cooking-sized portions (200–500g) and freeze them flat in bags. You'll always have beef ready to defrost in 30 minutes under cold water.

Brown Ground Beef — Safe or Spoiled?

This is the most common source of confusion with ground beef. The bright red colour of fresh mince comes from oxymyoglobin — a pigment that forms when iron in the meat is exposed to oxygen. When meat is vacuum-packed or sits in the centre of a packet away from oxygen, it turns brown. This is completely normal and does not indicate spoilage.

The real checks for spoilage are:

⚠️ Never rely on colour alone. Ground beef that smells fine but is brown on the outside is almost certainly safe. Ground beef that smells off but looks red is dangerous. The nose test is always more reliable than appearance.
