How to Tell If Milk Has Gone Bad

Your nose is a better judge than the date on the carton. Fresh milk has a clean, neutral smell. Spoiled milk announces itself. Check for:

Why Does Milk Spoil?

Milk contains naturally occurring bacteria. Even pasteurised milk isn't sterile — pasteurisation reduces bacteria to safe levels but doesn't eliminate them. Over time, these bacteria multiply and produce acids that curdle the proteins and create the sour smell and taste associated with spoiled milk.

The colder your fridge, the slower bacteria grow. At 40°F (4°C) or below, milk stays fresh significantly longer than at 45°F. Many home fridges run too warm — check yours with a thermometer.
